You are completely over-analyzing it. He never completely changed the subject, there just wasn't much to say and he felt like keeping up the convo. Not to mention in the deleted scenes they have a conversation about people and places they knew in Amsterdam.

Hi everyone! I'd like to ask your opinions about an other thing in Pulp Fiction. If you have watched the entire film you know that there were several occasions when Vincent mentioned his trip to Amsterdam. My question is if he ever went to Amsterdam by the script? I bet all of you have never thought about it but it came to my mind after my dad was suggesting it. There are some reasons. First one is that when Mia told Vincent that she goes to Amsterdam once a year, he quickly changed the subject
